Cocoa Bean Processing Expeller Technology Cocoa Butter Cocoa Mass Cocoa Liquor Cocoa Powder

The cocoa processing plants offered by Ice Com and BEAR transform raw cocoa into semifinished products.

These can be cocoa mass, cocoa butter and cocoa powder.

The technologies differ, for example, in the type of drying, the type of roasting process of cocoa beans or cocoa nibs, the different grinding processes and the debacterization.

The capacities start efficiently at 100 kg / h in cocoa mass production and can be offered by us up to 4,000 kg / h.

Advantages of the new expeller technology:

  • less thermal stress
  • higher product quality
  • significantly lower microbiological load
  • approx. 40% lower energy consumption
  • less process time
  • less space required

Cocoa beans grow in tropical areas around the globe. Cocoa plants need a lot of humidity and shadow. The cocoa fruit is harvested mainly in September and a smaller part in May. The cocoa fruit is picked from the tree and opened. The cocoa beans are taken out and placed in heaps and covered with leaves and the fermentation starts. After several days the fermented beans are exposed to the sun for drying. The dried beans are filled into jute bags and are ready for shipment.

Cocoa butter is commonly used in the manufacture of chocolate. It is also widely used in cosmetic products such as moisturizing creams and soap.

Cocoa powder can be used as an ingredient in almost any foodstuff. For example, it is used in chocolate-flavored drinks, chocolate-flavored desserts such as ice cream and mousse, chocolate spreads and sauces, and cakes and biscuits.

Cocoa liquor / cocoa mass is used with other ingredients,to produce chocolate. Chocolate is used as a product on its own or combined with other ingredients to form confectionery products.

When we talk about the capacity of a line, we talk always about the yearly capacity.

A line for processing of cocoa beans is usually never stopped. It works 24 hours a day and 330 days a year. The remaining 35 days of the year are reserved for overhauling of the line. This overhauling is absolute necessary to ensure that the line can run without any major interruptions(maintenance) 330 days a year.
